It truly isn’t pumpkin season until you’ve had your first pumpkin coffee. And although it might still be 90 degrees out where you are (it is here for me!), once you take that first sip suddenly it’s all about boots, cozy sweaters, pumpkin patches, and baking a loaf of pumpkin bread. Am I right or am I right?!

If you follow me on Instagram then you know I’m a fan of pumpkin year-round, and especially in the fall. I saw a funny meme the other day that said there are only two seasons. Fall and waiting for fall. I couldn’t agree more!

What is a Pumpkin Cream Cold Brew with Sweet Cream Cold Foam?

New in 2019, the pumpkin cream cold brew was Starbuck’s newest addition to the pumpkin spice latte family. They describe it as a “super smooth fall treat” and I’ve got to say, I totally agree. The pumpkin cream cold foam is uber silky and super pumpkin-y.

It’s essentially cold brew coffee (ice, with brewed coffee) with vanilla syrup added, and topped with a semi-sweet pumpkin cream cold foam topping. The topping is made from cream and pumpkin spice sauce.

If you haven’t tried it and love all things pumpkin, it’s simply a must. But for the days you want to make coffee at home, this recipe is the perfect stand in!

Homemade Pumpkin Cream Cold Brew vs. Starbucks’ Version

This recipe gives Starbucks a run for its money. Here are a few reasons why my recipe wins over Starbucks’ in my opinion:

  • Made dairy free (theirs is not)
  • Lower in sugar (theirs has 31 grams)
  • Cheaper (I didn’t calculate cause math’s not my thing but I’m assuming here!).

I know you’ll love it! So let’s start at the beginning and make this delicious pumpkin coffee drink at home!

Homemade Starbucks Pumpkin Cream Cold Brew Recipe Ingredients

note: your pumpkin puree doesn’t have to be organic for this recipe

1. Cold brew or iced coffee

Starbucks uses cold brew in the traditional drink but you could totally use iced coffee too. Any cold brew will work — use your favorite!

2. Milk: Unsweetened oat milk, other non-dairy, or dairy milk of your choice or dairy free heavy whip

I used oat milk in this recipe because it has a higher fat content than other non-dairy milks like almond. This makes it thicker and gives it those silky-smooth vibes. I ended up testing this recipe with two different oat milks and it worked well with both. My favorite oat milk to use for coffee is this one.

This year I also made the recipe with this Califia Farms dairy free heavy whip which turned out super similar to the Starbucks version because it’s super thick just like heavy cream but dairy free. If you can find it at a store near you, I definitely recommend! I usually find it at Target or Whole Foods

If you prefer cow’s milk, you can sub that in for the oat milk too!

3. Pumpkin puree

Hopefully you’ve stocked up because if you’re going to make any recipe you see on this blog you’re going to need it! P.S. make sure it’s pumpkin puree and not pumpkin pie mix. Pumpkin puree is just pumpkin while pumpkin pie mix contains added sugar.

Most coffee shop versions do not use real pumpkin which is another reason why I love this version — you get to reap the nutritional benefits of REAL pumpkin in your coffee. Win, win.

4. Maple syrup

Maple syrup offers the perfect amount of sweetness without being overpowering in flavor. Honey would also be a great natural sweetener to use in this recipe.

5. Pumpkin spice or cinnamon

Either one of these will work! If you can’t find pumpkin spice you can definitely make your own or use cinnamon.

6. Vanilla extract

The Starbucks version contains vanilla syrup. I’m lightening things up with no added sugar from this ingredient by using vanilla extract.

7. Salt

A pinch of salt to really bring out the flavors and doesn’t make it salty tasting by any means.

Equipment Needed to Make This Starbucks Cold Brew Recipe

  • Hand-held frother or whisk This hand-held frother works perfectly!
  • Mason jar — you’re going to add all of the ingredients into a mason jar

How to Make Pumpkin Sweet Cream Cold Foam

Add the the oat milk or dairy free heavy whip, pumpkin puree, maple syrup, pumpkin spice or cinnamon, vanilla extract, and salt to a frother. You can also use a hand-held frother to get it nice and frothy (a high-speed blender on the highest setting would also work).

How to Make Pumpkin Cream Cold Brew Coffee with Pumpkin Cold Foam

  1. Make the pumpkin cream cold foam. Combine the ingredients for the pumpkin cream cold foam in a mason jar. Froth until combined and use right away or pop it into the fridge.
  2. Get your cold brew ready. Pour a glass of cold brew or iced coffee over ice.
  3. Put it together and start sipping! Pour the pumpkin cream over the cold brew, top with extra pumpkin spice, and enjoy! Use a straw to mix it together — I recommend sipping without a straw though because that way you get more of the foam in every sip.

Alternatively, you can make this recipe by making this homemade pumpkin spice syrup, adding that to oat milk and frothing it and then pouring your cold brew on top!

Because the sugar is so high in the Starbuck’s version, I would definitely put this drink in the treat category vs. an everyday type of drink! My recipe is lower in sugar and calories if you’re looking for a healthier alternative.

Is The Pumpkin Cream Cold Brew Made Dairy-Free at Starbucks?!

Unfortunately no, because it is made with heavy cream it’s not dairy free. As of right now there isn’t a way to order it dairy free. Using dairy free heavy whip like I recommend for this recipe gives it such a similar taste and texture to the Starbucks version, you will love it!

How I Order the Pumpkin Cream Cold Brew at Starbucks

Although I’m a dietitian, I’m not the food police! That said, I don’t think it’s the worst thing if you want to treat yourself to the real version of this drink a few times during the season — I certainly do myself because that’s the balance I like to have in my life.

When I do order it from Starbucks, I ask for a couple of modifications for make it lower in sugar.

Here’s how I order it when I want to lower the sugar but still get that good pumpkin taste:

  • tall size
  • no vanilla syrup in the cold brew (or ask for sugar-free vanilla syrup)
  • light cold foam — I just say: “Can you do light cold foam on top? About half the regular amount”

A grande would have 2-3 pumps of syrup in the cold brew, which is way too much in my opinion taste and sugar wise! I think one or half would definitely do the trick if you’re looking for something less sweet.

Notes

Cold pumpkin foam can be stored in the fridge for up to a week. Re-froth to enjoy! 
You can also make this homemade pumpkin spice syrup, add that to your oat milk and froth it and pour your cold brew on top.

How to make homemade pumpkin seed milk! It’s a dairy-free milk alternative that’s easy to make and super versatile to use in smoothies, coffee, oatmeal and more.

Move over oat milk and almond milk because there’s a new dairy-free milk alternative on the block made from pumpkin seeds!

Pumpkin seed milk is a thick and creamy milk alternative made solely from pumpkin seeds and a couple other simple ingredients I’m betting you have in your pantry.

It doesn’t require any soaking of the seeds or straining of the milk, you just simply blend the pumpkin seeds in a high-speed blender to get this delicious seed milk that can be used in a variety of ways.

In terms of texture I would say it’s just as thick and creamy if not more thick and creamy than oat milk and coconut milk.

I added pumpkin spice to this recipe to give it a hint of fall flavor and warmness from cozy spices. Fall is on the horizon and I’ll take any excuse I can to whip out my pumpkin spice!

Also known as “pepita” (the Spanish word for pumpkin seed), pumpkin seeds are a pantry staple of mine because they are so easy to sprinkle on anything you’re eating for more nutrition. I’m excited to have another way to use them in this super easy homemade seed milk recipe!

Nutrition Benefits of Pumpkin Seeds

Pumpkin seeds are small but mighty when it comes to nutrition. They’re a good source of:

  • Plant-based protein
  • Fiber
  • Magnesium — a mineral most of us don’t get enough of
  • Vitamin K
  • Zinc
  • Iron
  • Potassium
  • Copper
  • Manganese
  • Healthy fats
  • Antioxidants

Ingredients for Homemade Pumpkin Seed Milk

  • raw pumpkin seedsbe sure they are raw and not roasted & salted
  • filtered water
  • vanilla extract
  • maple syrup – alternatively you can sweetened with 1-2 dates, or honey. I do recommend sweetening it as it helps to balance out the bitterness of all those pumpkin seeds!
  • pumpkin pie spicecinnamon would also work if you don’t have pumpkin pie spice
  • salt

How to Make Homemade Pumpkin Seed Milk

Making homemade pumpkin seed milk is super easy. Compared to other nut milks where soaking and straining might be involved, you don’t have to do any of that with pumpkin seed milk.

Simply add the pumpkin seeds to a high-speed blender with filtered water, maple syrup, vanilla extract, pumpkin pie spice and salt. Blend on high for 2-3 minutes until smooth and creamy.

It will be a light shade of green and this is totally normal because of the pumpkin seeds! I recommend refrigerating before use as it tastes best cold.

How Does Pumpkin Seed Milk Taste?

The first time I made this recipe I really wasn’t sure how it would taste or if I would like it. I love pumpkin seeds on salads, grain bowls, and oatmeal but pulsed into a milk? I wasn’t sure!

This seed milk has a really creamy mouthfeel and does in fact taste like pumpkin seeds. The added sweetener and salt really help to balance out the bitterness of the pumpkin seeds and give it a balanced, mellow flavor.

Whereas you can’t really taste the almonds in almond milk, I think you can taste the pumpkin seeds in this pumpkin seed milk when taking a sip. Or if you were trying it not knowing it was made from pumpkin seeds, you would definitely be able to figure it out based on the taste.

When I used it as the liquid for my smoothie that had banana, pineapple and spinach, I really couldn’t taste the milk at all but liked knowing I was getting all of that extra nutrition from it!

Storing Pumpkin Seed Milk

Store pumpkin seed milk in a sealed glass jar in the fridge for up to a week. Separation is natural, so just give it a good shake before you want to use it.

In terms of pumpkin seeds, I also recommend storing them in the fridge for maximum freshness. The oils in pumpkin seeds can go rancid after a while so just like nuts, storing pumpkin seeds in the fridge helps to keep them fresh.

How to Use Pumpkin Seed Milk

You can use pumpkin seed milk just like you would use regular milk or nut or oat milk. Here are a few different ways I recommend using it:

  • in smoothies
  • in chia seed pudding
  • in overnight oats or regular oatmeal
  • with granola or cereal
  • in your coffee
  • in recipes that call for milk or almond milk
  • in recipes that call for coconut milk because it’s just as thick and creamy if not more

Trouble unwinding and getting sleepy for bed? Pumpkin seed milk might be able to help.

Not only is it super high in magnesium which helps us to relax and has been linked to increased sleep quality, but it also contains tryptophan (small amounts) and zinc which plays a beneficial role in helping us sleep as well.

Pumpkin seeds contain about 14% of the recommended daily intake of zinc (per 1 oz. serving). Zinc helps to convert tryptophan (same thing that’s in turkey that makes us sleepy) into serotonin which then gets converted into melatonin, the hormone that regulates sleep.

So if you’re looking for a way to naturally get your body into sleep mood consider some of these bedtime snacks that include pumpkin seed (PS) milk:

Silky smooth with notes of pumpkin and pumpkin spice, if you’re a pumpkin lover like me I know you’ll love sipping on this fun cocktail. Made with just a few simple ingredients I’m betting are already in your pantry, shake it up and pour it into a fancy glass for any occasion this holiday season.

What’s an espresso martini?

If you’re not familiar, an espresso martini is a popular cocktail made with espresso, vodka and simple syrup for a coffee-flavored cocktail that that’s reminiscent of a cup of coffee, except spiked!

Since pumpkin-flavored coffee is super popular during the fall, I thought a pumpkin twist on this popular coffee cocktail would be totally perfect. Typically I’m a wine girl but this pumpkin espresso martini has got me so excited to enjoy it this Thanksgiving with my family. Along with the pumpkin cheesecake I’m making, I’ll be bringing all of the ingredients to whip these up!

Pumpkin Coffee Cocktail

This espresso martini is for you if you love all things coffee and pumpkin. One of the reasons I love pumpkin puree so much is because it’s incredibly versatile. From cocktails to cakes and everything in between, there’s almost nothing you can’t do with pumpkin both sweet and savory.

Not to mention pumpkin adds vitamin A, C, E as well as potassium and fiber to anything that you add it to. It’s a fall superfood that I believe should be in everyone’s pantry year-round! Pumpkin puree is an inexpensive vegetable that adds an awesome taste and more nutrition to anything. Even dog treats!

Another fall cocktail I love is this pumpkin apple spice cocktail also made with Libby’s.

PUMPKIN PUREE – ABOUT LIBBY’S 100% PURE PUMPKIN

Libby’s is the only ones I trust when it comes to pumpkin puree because they’ve been the leading producer of canned pumpkin for generations. I always have a can (or 5!) in my pantry year-round.

One thing I recently learned that I really admire is that their factory in Morton, IL is 100% landfill-free. They are able to achieve this by recycling pumpkin by-products and incinerating the remaining waste for energy recovery. Pumpkin waste, like rind and skin, finds new life as land-applied fertilizer—except for the seeds—those are sold for wild squirrel food.

It’s nice knowing that the process of harvesting a vegetable that can be used in so many different ways is also finding many different ways to ensure as little waste from that process as possible. Pumpkin puree is incredibly versatile and I’m happy to see that the whole process is one that aims to be sustainable.

White chocolate chips act as the sweetener in the recipe and add another layer of creaminess to this pumpkin spice latte recipe. The taste of white chocolate perfectly complements pumpkin and pumpkin spice and feels like a fancy coffee house drink you can enjoy at home.

PUMPKIN PUREE – ABOUT LIBBY’S 100% PURE PUMPKIN

Libby’s is the only ones I trust when it comes to pumpkin puree because they’ve been the leading producer of canned pumpkin for generations. I always have a can (or 5!) in my pantry year round.

One thing I recently learned that I really admire is that their factory in Morton, IL is 100% landfill-free. They are able to achieve this by recycling pumpkin by-products and incinerating the remaining waste for energy recovery. Pumpkin waste, like rind and skin, finds new life as land applied fertilizer—except for the seeds—those are sold for wild squirrel food.

Pumpkin is incredibly versatile and adds more nutrition to any recipe you add it too. Here are a few ways to use up the entire can of pumpkin — great in the name of less food waste and to help add more nutrition to your diet!

  • add to soups and chilis this time of year like this pumpkin turkey chili

Ingredients

  • 1 cup unsweetened oat milk
  • ¼ cup LIBBY’S 100% Pure Pumpkin
  • ¼ cup white chocolate chips
  • 2 tsp. pumpkin pie spice
  • Pinch of salt
  • 2 cups coffee
  • whipped cream optional

Instructions

  • In a small saucepan, combine oat milk, pumpkin puree, white chocolate chips, pumpkin pie spice and salt. Whisk together over low heat for 1-2 minutes.
  • Remove from heat and use a milk frother or blender to froth the mixture.
  • Pour on top of coffee and top with a dollop of whipped cream and extra pumpkin pie spice and enjoy!

One of the things I definitely look forward to in the fall is pumpkin coffee! It’s pretty crazy how Starbucks and Dunkin release their pumpkin coffee drinks earlier and earlier each year to get people excited for the season!

I definitely do treat myself to coffee house versions of pumpkin drinks in the fall but also like to have a healthier version at home most of the time instead. Coffee shop versions are often packed with a lot of extra calories and sugar (and not made with real pumpkin!).

Sugar in Pumpkin Spice Lattes at Starbucks

A grande pumpkin spice latte with whipped cream at Starbucks has 50 grams of sugar! It is recommended that women only have 25 grams of less in a DAY — yikes!

How Often Should You Drink PSLs?

That said, I wouldn’t recommend having one every single day in the fall but rather treating them as a once in a while type of thing. There are definitely more nutritious ways to start your day which is where this pumpkin spice oat milk latte comes in!

Using Oat Milk in Your Pumpkin Spice Latte

It’s time to rethink our favorite fall drink!

My recipe vegan pumpkin spice oat milk latte has no added sugar but still tastes delicious and will give you all the fall feels because it’s super pumpkin-y! I use dairy-free oat milk that has a super silky soft and smooth texture that adds creaminess to anything you put it into.

I’m currently loving this Califia Farms Oat Barista Blend, and it’s the one I recommend using in this vegan latte recipe! I don’t feel like I need to add any sugar to it because the creamy texture makes it taste really rich like a “traditional” PSL would! Using almond milk is good too but doesn’t give it quite the same level of creaminess

Using plant-based milks like oat milk in place of dairy milk is good vegan alternative and a great for anyone who simply prefer non-dairy milk in their coffee. I can’t wait to hear what you think of this homemade latte recipe!

How to Order a Healthier PSL at Coffee Shops

  • Ask for 1 pump pumpkin instead of the usual. There are three pumps of syrup in a grande and that just makes it super sweet!
  • Ask for no whipped cream or light whip as they can be very generous with how much they put on top!
  • Add 1/2 or 1 pump of pumpkin spice syrup to a cold brew coffee.
  • Add 1/2 or 1 pump of pumpkin spice syrup to an americano.

These are good ways to still enjoy the taste of pumpkin with way less sugar, which is a win, win in my book.

  • Pumpkin puree — we’re using real pumpkin in the recipe because duh!

How to Make a Pumpkin Spice Oat Milk Latte

  1. Start by making your coffee. Use your favorite brewed or Nespresso coffee in this recipe. Any unflavored Nespresso pod will work. Since I wrote this post Nespresso has come out with pumpkin spice cake flavored pods. To me they are spiced very subtly which I like a lot!
  2. Froth or blend the oat milk, pumpkin puree, and pumpkin spice. Combine oat milk, pumpkin puree and pumpkin spice in a milk frother. If you don’t have a milk frother, I recommend adding them to a blender and blending on high for a few seconds.
  3. Add the milk to your coffee. Pour the pumpkin oat milk mixture
  4. Top with extra pumpkin spice. Sprinkle a little extra pumpkin spice on top.
  5. Sip & Enjoy! Extra points if you pair it with a slice of this pumpkin spice latte bread!

Best Dairy Free Pumpkin Smoothie

One of my favorite things to kick off pumpkin season every August is this healthy pumpkin pie smoothie that’s high in protein and absolutely delicious for the season. It’s everything we love about fall in smoothie form plus it’s nutritious and super easy to make with simple ingredients I’m betting you already have at home.

Smoothies are such a delicious and simple way to add more nutrition to your diet whether that be for breakfast, as a snack or after a workout. The beauty of smoothies is that you can pack a lot of nutrition by way of different fruits vegetables, sources of protein and fat that you may not typically get into one delicious drink.

How to Elevate Your Smoothie Game at a Low Cost

I can’t tell you how many times I make this smoothie between August and the end of October! It feels like it should be $20 at some expensive smoothie shop but you just made it at home for a fraction of the price. Fancy up the glass by smearing a little bit of Greek yogurt and almond butter in the inside before you pour the smoothie in. It’s a fun little touch!

This is a pumpkin banana smoothie, however, you don’t taste the banana, it’s just there to add more creaminess and extra nutrition. It doesn’t overpower the taste of pumpkin whatsoever!

Healthy Pumpkin Smoothie

You can feel good sipping on this pumpkin smoothie recipe all season long because it’s balanced and contains good nutrition via pumpkin puree, banana, added protein, almond butter, and any super seeds you add to it.

Health Benefits of the Ingredients

Pumpkin truly is a fall superfood, and I don’t say that lightly as a dietitian. It’s high in fiber and vitamins A, C, and E (which are great for skin health) as well as potassium and zinc. Having a can of pumpkin on hand year-round and in the fall is such a great, easy way to add more nutrition to your smoothies and other meals and snacks.

Top this smoothie with pumpkin seeds which are small but mighty when it comes to nutrition too. They’re a great source of plant-based protein, fiber, healthy fat, and magnesium.

Why I Added the Protien in This Pumpkin Protein Smoothie

A lot of typical smoothies are lacking one important component to keep them balanced and satiating — protein. I wanted this smoothie recipe to not only be a fun and delicious breakfast or snack, but to also be balanced with protein to give it more staying power and ensure it’s not something you’re hungry going to be hungry five minutes after eating!

I recommend adding a scoop of plant-based protein or whatever protein powder you use to this smoothie to increase the protein content. Collagen, or adding sources of plant-based protein like flax seeds, chia seeds, or hemp seeds would also be a great option for giving this smoothie a protein boost.

Ingredients For Healthy Pumpkin Spice Smoothie

  • Pumpkin Puree — you want to make sure it’s pumpkin puree and not pumpkin pie mix! Any canned pumpkin will do.
  • Frozen Banana — this is going to add more creaminess to the smoothie and I promise the banana does not overpower the pumpkin taste!
  • Unsweetened Dairy-Free Milk of Choice — I typically use unsweetened almond milk or oat milk.
  • Pumpkin Pie Spice or Cinnamon
  • Pitted Date — add a pitted date or 2 to give this smoothie more natural sweetness. I recommend trying it with just the banana first as I think that gives it a nice amount of sweetness.
  • Hemp Seeds/ Ground Flax Seed / Chia Seeds – each of these seeds is a good source of healthy fat, fiber, and plant-based protein. This helps the smoothie become more blood-sugar friendly and helps you stay fuller for longer!
  • Creamy Unsweetened Almond Butter — almond butter complements the flavor of pumpkin and pumpkin spice so well.
  • Ice
  • Granola — I love something crunchy on top of this frozen pumpkin smoothie! My favorite granola is Purely Elizabeth pumpkin cinnamon granola (it’s available year-round!).
  • Pumpkin Seeds — pumpkin seeds would be another great addition to the top of this smoothie! Pumpkin seeds are a good source of plant-based protein, fiber, and magnesium.

Tips for Making a Thick & Creamy Pumpkin Protein Smoothie

  • Use frozen bananas. If you don’t have any frozen bananas on hand but still want to make this smoothie, simply add a little more ice. I have not tried it, but you could also use frozen riced cauliflower in place of the bananas.
  • Don’t add too much liquid. I like my smoothies thick enough to eat with a spoon (I think they’re more satisfying that way!).
  • Freeze leftover pumpkin puree. When you have a little pumpkin puree leftover in a can, don’t throw it out! Freeze it in an ice cube tray and then use those “pumpkin cubes” anytime you’re making a smoothie. They’re even great to throw in a soup this fall.

Inspired by a Wendy’s chocolate Frosty, this smoothie taste just like one except is made dairy free with simple ingredients and less sugar than the real thing. To be clear, I’m not against having a real Wendy’s Frosty when the craving strikes, I just think a more balanced and blood sugar friendly option like this one is more of an every day thing!

Thick enough to eat with a spoon, this smoothie will bring back good memories of your childhood when the worries were small and you were just hanging out at Wendy’s with your friends! Was that just me?!

Please tell me you were one of those people who also dipped their fries into your frosty too! That is truly the original sweet and salty combination that you just can’t beat.

Oat milk, ice and frozen banana gives this smoothie that frosty like consistency and texture. Naturally sweetened with just banana, it’s not overly sweet plus has a good silky smooth chocolatey flavor!

While I see people pack in so many ingredients into their smoothies, I prefer to keep mine pretty simple and always balanced with protein, fat, and fiber so that I stay fuller for longer and don’t have a blood sugar crash after drinking one. If you want to add a handful of spinach to this chocolate smoothie, you totally can — the almond butter and banana will mask the taste so you won’t even know it’s there!

  • ice
  • frozen banana — a regular banana would also work but frozen banana gives this smoothie a thicker, creamier, more frosty-like texture. When my bananas are spotty and about to go bad before I can get to using them, I take the peel off and stick them in a Stasher bag in the freezer!
  • unsweetened oat milk — I find this makes smoothies creamier and thicker than almond milk!
  • collagen — read more about the benefits of collagen here. mindbodygreen has a really delicious low sugar chocolate collagen that I recommend, however an unflavored collagen would also work to give this smoothie more protein.   • cacao powder – cacao powder is less processed version of cocoa powder. Typically cocoa powders are sweetened, cacao powder, on the other hand is not and a good source of polyphenols which help reduce inflammation.
  • cacao nibs — alternatively you could use mini chocolate chips. Cacao nibs are slightly more bitter and a good source of iron and magnesium. They are like nature’s chocolate chip!
  • creamy unsweetened almond butter– I love the Target brand. Check out what else I stock up on at Target in this post about grocery finds at Target. Almond butter gives this smoothie a little more protein, plus healthy fat that helps stabilize our blood sugar.

For more protein (because collagen is NOT a complete source of protein) I recommend adding a protein powder of your choice. This will give the smoothie more staying power and make it a good post-workout option.

Benefits of a Balanced Smoothie

Smoothies are a great way to add more nutrition to your diet in a quick and convenient way. No matter the flavor combination, there’s a few things I think every smoothie should have to be balanced. In order to be balanced and keep you full for more than an hour your smoothies should contain protein, healthy fat and fiber.

All of these components help with satiety which means they help to keep us fuller for longer and more satisfied from the smoothie.

In this orange oat milk smoothie, the protein powder/collagen is giving you protein, the fiber is coming from the orange and flax seed and the healthy fat is also coming from the flax seed or almond butter if you choose to add that in. Orange Ginger POWER Smoothie Ingredients

  • 1 cup unsweetened almond or oat milkI love how creamy and thick oat milk makes smoothies but you can definitely use whatever milk you prefer.
  • 2 Sunkist® Cara Cara orangesI love how cara cara oranges look like a regular orange on the outside but are pink in the inside! Not to mention they contain all of the vitamin C you need in a day.

If you follow me on Instagram, then you know I’ve put pumpkin into a lot of recipes, however this is my first real pumpkin cocktail recipe!

This fall cocktail is pumpkin spice and everything nice with notes of cinnamon, apple and honey. I used Libby’s 100% pure pumpkin because I always have a can (or five!) stocked in my pantry for baking and more. I decided to name this pumpkin apple spice cocktail because of exactly what’s in it and I’m calling it “Once Upon a Pumpkin punch”, named after this blog too!

Making cocktails at home is a really fun way to experiment with different seasonal flavors, and try something you maybe haven’t tried before. A fall themed cocktail like this is perfect for a date night at home, and your Thanksgiving table. Cheers!

Get a little fancy with this pumpkin spice whipped coffee recipe that’s perfect for fall! Inspired by the Dalgona coffee trend that nearly broke the internet, this dairy-free version is perfect if you love pumpkin coffee!

Silky smooth and whipped to perfection with hints of pumpkin and pumpkin spice swirled about, you absolutely have to try this pumpkin spice whipped coffee for fall!

I must say, I never got on board with the Dalgona (aka whipped) coffee trend that swept the Internet in the spring, but I was curious to see if a pumpkin version would turn out and if it would be good!

If you follow me on Instagram, then you know that I’m all about pumpkin everything and there’s basically nothing I won’t put pumpkin into! I just love how versatile and delicious it is year round and especially in the fall!

Nothing screams fall more than pumpkin coffee, am I right?! And if you’re a pumpkin spice latte lover, I know you will like this pumpkin whipped coffee version too! Starbucks has nothing on it (I do love the pumpkin cream cold brew from Starbucks though and order mine without vanilla syrup!)

What is whipped coffee?

Whipped coffee, also known as Dalgona coffee was the Tiktock craze that swept the nation earlier this spring. I almost think it should be called inside out coffee because you’re basically putting the coffee on top of the milk! Using a mixer, you whip instant coffee with water, sugar and in this case pumpkin to get a fluffy, whipped cream like texture that’s extra silky smooth!

  • instant espresso coffee (any brand will work)
  • pumpkin puree
  • water
  • coconut sugar – without the sugar this coffee would be super bitter!
  • collagen (optional; I love this unflavored collagen from mindbodygreen)
  • pumpkin pie spice or cinnamon
  • milk of choice (I like using unsweetened almond milk or oat milk for a dairy-free option in this case)
  • ice

Making whipped coffee is easier than you might have thought but does take a little bit of patience!

  1. Boil the water. You will only need 2 tbsp. of water for this recipe, however I recommend boiling about a cup or so in a small saucepan so it’s easy to measure out with a tablespoon.
  2. Add the coffee and the water to the bowl of a stand mixer. While the water is boiling, add 2 tbsp. of instant coffee to the bowl of a stand mixer. Add the boiling water next so that it interacts with the coffee.
  3. Add the coconut sugar, pumpkin puree and collagen if using. Add the rest of the ingredients directly on top of the coffee and water.
  4. Whisk on high for 4-5 minutes. Here’s where the patience comes in! It will take a few minutes for the mixture to start getting thick and whipped cream like. Make sure your mixer is on one of the highest speeds and that you’re using the whisk attachment.
  5. Prepare your milk over ice. For this recipe I like using unsweetened almond milk or oat milk. Get it ready while your coffee is whipping.
  6. Spoon whipped coffee on top of milk. The coffee will start mixing together with the milk, that’s fine!
  7. Sprinkle pumpkin pie spice on top. Mix together and enjoy!

  • 2 tbsp. instant espresso coffee
  • 2 tbsp. boiling water
  • 2 tbsp. coconut sugar
  • 1 tbsp. pumpkin puree
  • 1 tbsp. collagen optional
  • dash of pumpkin pie spice

Instructions

  •  In a small saucepan boil the water. I recommend boiling a cup or so of water so that it’s easy to portion out with a tablespoon.

  • Pour the water directly over the coffee, and then add the coconut sugar, pumpkin puree and collagen if using.
  • Whisk on high for 4-5 minutes until the coffee mixer starts to look like whipped cream. 
  • In the meantime, prepare a glass or jar of milk over ice.
  • Spoon the whipped coffee over the milk, sprinkle extra pumpkin pie spice on top, mix together with a spoon or straw and enjoy!
