]]>It truly isn’t pumpkin season until you’ve had your first pumpkin coffee. And although it might still be 90 degrees out where you are (it is here for me!), once you take that first sip suddenly it’s all about boots, cozy sweaters, pumpkin patches, and baking a loaf of pumpkin bread. Am I right or am I right?!
If you follow me on Instagram then you know I’m a fan of pumpkin year-round, and especially in the fall. I saw a funny meme the other day that said there are only two seasons. Fall and waiting for fall. I couldn’t agree more!
New in 2019, the pumpkin cream cold brew was Starbuck’s newest addition to the pumpkin spice latte family. They describe it as a “super smooth fall treat” and I’ve got to say, I totally agree. The pumpkin cream cold foam is uber silky and super pumpkin-y.
It’s essentially cold brew coffee (ice, with brewed coffee) with vanilla syrup added, and topped with a semi-sweet pumpkin cream cold foam topping. The topping is made from cream and pumpkin spice sauce.
If you haven’t tried it and love all things pumpkin, it’s simply a must. But for the days you want to make coffee at home, this recipe is the perfect stand in!
This recipe gives Starbucks a run for its money. Here are a few reasons why my recipe wins over Starbucks’ in my opinion:
I know you’ll love it! So let’s start at the beginning and make this delicious pumpkin coffee drink at home!
Starbucks uses cold brew in the traditional drink but you could totally use iced coffee too. Any cold brew will work — use your favorite!
I used oat milk in this recipe because it has a higher fat content than other non-dairy milks like almond. This makes it thicker and gives it those silky-smooth vibes. I ended up testing this recipe with two different oat milks and it worked well with both. My favorite oat milk to use for coffee is this one.
This year I also made the recipe with this Califia Farms dairy free heavy whip which turned out super similar to the Starbucks version because it’s super thick just like heavy cream but dairy free. If you can find it at a store near you, I definitely recommend! I usually find it at Target or Whole Foods
If you prefer cow’s milk, you can sub that in for the oat milk too!
Hopefully you’ve stocked up because if you’re going to make any recipe you see on this blog you’re going to need it! P.S. make sure it’s pumpkin puree and not pumpkin pie mix. Pumpkin puree is just pumpkin while pumpkin pie mix contains added sugar.
Most coffee shop versions do not use real pumpkin which is another reason why I love this version — you get to reap the nutritional benefits of REAL pumpkin in your coffee. Win, win.
Maple syrup offers the perfect amount of sweetness without being overpowering in flavor. Honey would also be a great natural sweetener to use in this recipe.
Either one of these will work! If you can’t find pumpkin spice you can definitely make your own or use cinnamon.
The Starbucks version contains vanilla syrup. I’m lightening things up with no added sugar from this ingredient by using vanilla extract.
A pinch of salt to really bring out the flavors and doesn’t make it salty tasting by any means.
Add the the oat milk or dairy free heavy whip, pumpkin puree, maple syrup, pumpkin spice or cinnamon, vanilla extract, and salt to a frother. You can also use a hand-held frother to get it nice and frothy (a high-speed blender on the highest setting would also work).
Alternatively, you can make this recipe by making this homemade pumpkin spice syrup, adding that to oat milk and frothing it and then pouring your cold brew on top!

Because the sugar is so high in the Starbuck’s version, I would definitely put this drink in the treat category vs. an everyday type of drink! My recipe is lower in sugar and calories if you’re looking for a healthier alternative.

Unfortunately no, because it is made with heavy cream it’s not dairy free. As of right now there isn’t a way to order it dairy free. Using dairy free heavy whip like I recommend for this recipe gives it such a similar taste and texture to the Starbucks version, you will love it!
Although I’m a dietitian, I’m not the food police! That said, I don’t think it’s the worst thing if you want to treat yourself to the real version of this drink a few times during the season — I certainly do myself because that’s the balance I like to have in my life.
When I do order it from Starbucks, I ask for a couple of modifications for make it lower in sugar.
Here’s how I order it when I want to lower the sugar but still get that good pumpkin taste:
A grande would have 2-3 pumps of syrup in the cold brew, which is way too much in my opinion taste and sugar wise! I think one or half would definitely do the trick if you’re looking for something less sweet.

]]>Move over oat milk and almond milk because there’s a new dairy-free milk alternative on the block made from pumpkin seeds!
Pumpkin seed milk is a thick and creamy milk alternative made solely from pumpkin seeds and a couple other simple ingredients I’m betting you have in your pantry.
It doesn’t require any soaking of the seeds or straining of the milk, you just simply blend the pumpkin seeds in a high-speed blender to get this delicious seed milk that can be used in a variety of ways.
In terms of texture I would say it’s just as thick and creamy if not more thick and creamy than oat milk and coconut milk.
I added pumpkin spice to this recipe to give it a hint of fall flavor and warmness from cozy spices. Fall is on the horizon and I’ll take any excuse I can to whip out my pumpkin spice!
Also known as “pepita” (the Spanish word for pumpkin seed), pumpkin seeds are a pantry staple of mine because they are so easy to sprinkle on anything you’re eating for more nutrition. I’m excited to have another way to use them in this super easy homemade seed milk recipe!

Making homemade pumpkin seed milk is super easy. Compared to other nut milks where soaking and straining might be involved, you don’t have to do any of that with pumpkin seed milk.
Simply add the pumpkin seeds to a high-speed blender with filtered water, maple syrup, vanilla extract, pumpkin pie spice and salt. Blend on high for 2-3 minutes until smooth and creamy.
It will be a light shade of green and this is totally normal because of the pumpkin seeds! I recommend refrigerating before use as it tastes best cold.
The first time I made this recipe I really wasn’t sure how it would taste or if I would like it. I love pumpkin seeds on salads, grain bowls, and oatmeal but pulsed into a milk? I wasn’t sure!
This seed milk has a really creamy mouthfeel and does in fact taste like pumpkin seeds. The added sweetener and salt really help to balance out the bitterness of the pumpkin seeds and give it a balanced, mellow flavor.
Whereas you can’t really taste the almonds in almond milk, I think you can taste the pumpkin seeds in this pumpkin seed milk when taking a sip. Or if you were trying it not knowing it was made from pumpkin seeds, you would definitely be able to figure it out based on the taste.
When I used it as the liquid for my smoothie that had banana, pineapple and spinach, I really couldn’t taste the milk at all but liked knowing I was getting all of that extra nutrition from it!
Store pumpkin seed milk in a sealed glass jar in the fridge for up to a week. Separation is natural, so just give it a good shake before you want to use it.
In terms of pumpkin seeds, I also recommend storing them in the fridge for maximum freshness. The oils in pumpkin seeds can go rancid after a while so just like nuts, storing pumpkin seeds in the fridge helps to keep them fresh.
You can use pumpkin seed milk just like you would use regular milk or nut or oat milk. Here are a few different ways I recommend using it:
Trouble unwinding and getting sleepy for bed? Pumpkin seed milk might be able to help.
Not only is it super high in magnesium which helps us to relax and has been linked to increased sleep quality, but it also contains tryptophan (small amounts) and zinc which plays a beneficial role in helping us sleep as well.
Pumpkin seeds contain about 14% of the recommended daily intake of zinc (per 1 oz. serving). Zinc helps to convert tryptophan (same thing that’s in turkey that makes us sleepy) into serotonin which then gets converted into melatonin, the hormone that regulates sleep.

Silky smooth with notes of pumpkin and pumpkin spice, if you’re a pumpkin lover like me I know you’ll love sipping on this fun cocktail. Made with just a few simple ingredients I’m betting are already in your pantry, shake it up and pour it into a fancy glass for any occasion this holiday season.
If you’re not familiar, an espresso martini is a popular cocktail made with espresso, vodka and simple syrup for a coffee-flavored cocktail that that’s reminiscent of a cup of coffee, except spiked!
Since pumpkin-flavored coffee is super popular during the fall, I thought a pumpkin twist on this popular coffee cocktail would be totally perfect. Typically I’m a wine girl but this pumpkin espresso martini has got me so excited to enjoy it this Thanksgiving with my family. This espresso martini is for you if you love all things coffee and pumpkin. One of the reasons I love pumpkin puree so much is because it’s incredibly versatile. From cocktails to cakes and everything in between, there’s almost nothing you can’t do with pumpkin both sweet and savory.
Not to mention pumpkin adds vitamin A, C, E as well as potassium and fiber to anything that you add it to. It’s a fall superfood that I believe should be in everyone’s pantry year-round! Pumpkin puree is incredibly versatile and I’m happy to see that the whole process is one that aims to be sustainable.

]]>One of the things I definitely look forward to in the fall is pumpkin coffee! It’s pretty crazy how Starbucks and Dunkin release their pumpkin coffee drinks earlier and earlier each year to get people excited for the season!
I definitely do treat myself to coffee house versions of pumpkin drinks in the fall but also like to have a healthier version at home most of the time instead. Coffee shop versions are often packed with a lot of extra calories and sugar (and not made with real pumpkin!).
A grande pumpkin spice latte with whipped cream at Starbucks has 50 grams of sugar! It is recommended that women only have 25 grams of less in a DAY — yikes!
That said, I wouldn’t recommend having one every single day in the fall but rather treating them as a once in a while type of thing. There are definitely more nutritious ways to start your day which is where this pumpkin spice oat milk latte comes in!
It’s time to rethink our favorite fall drink!
My recipe vegan pumpkin spice oat milk latte has no added sugar but still tastes delicious and will give you all the fall feels because it’s super pumpkin-y! I use dairy-free oat milk that has a super silky soft and smooth texture that adds creaminess to anything you put it into.
I’m currently loving this Califia Farms Oat Barista Blend, and it’s the one I recommend using in this vegan latte recipe! I don’t feel like I need to add any sugar to it because the creamy texture makes it taste really rich like a “traditional” PSL would! Using almond milk is good too but doesn’t give it quite the same level of creaminess
Using plant-based milks like oat milk in place of dairy milk is good vegan alternative and a great for anyone who simply prefer non-dairy milk in their coffee. I can’t wait to hear what you think of this homemade latte recipe!

]]>One of my favorite things to kick off pumpkin season every August is this healthy pumpkin pie smoothie that’s high in protein and absolutely delicious for the season. It’s everything we love about fall in smoothie form plus it’s nutritious and super easy to make with simple ingredients I’m betting you already have at home.
Smoothies are such a delicious and simple way to add more nutrition to your diet whether that be for breakfast, as a snack or after a workout. The beauty of smoothies is that you can pack a lot of nutrition by way of different fruits vegetables, sources of protein and fat that you may not typically get into one delicious drink.
I can’t tell you how many times I make this smoothie between August and the end of October! It feels like it should be $20 at some expensive smoothie shop but you just made it at home for a fraction of the price. Fancy up the glass by smearing a little bit of Greek yogurt and almond butter in the inside before you pour the smoothie in. It’s a fun little touch!
This is a pumpkin banana smoothie, however, you don’t taste the banana, it’s just there to add more creaminess and extra nutrition. It doesn’t overpower the taste of pumpkin whatsoever!
You can feel good sipping on this pumpkin smoothie recipe all season long because it’s balanced and contains good nutrition via pumpkin puree, banana, added protein, almond butter, and any super seeds you add to it.
Pumpkin truly is a fall superfood, and I don’t say that lightly as a dietitian. It’s high in fiber and vitamins A, C, and E (which are great for skin health) as well as potassium and zinc. Having a can of pumpkin on hand year-round and in the fall is such a great, easy way to add more nutrition to your smoothies and other meals and snacks.
Top this smoothie with pumpkin seeds which are small but mighty when it comes to nutrition too. They’re a great source of plant-based protein, fiber, healthy fat, and magnesium.
A lot of typical smoothies are lacking one important component to keep them balanced and satiating — protein. I wanted this smoothie recipe to not only be a fun and delicious breakfast or snack, but to also be balanced with protein to give it more staying power and ensure it’s not something you’re hungry going to be hungry five minutes after eating!
I recommend adding a scoop of plant-based protein or whatever protein powder you use to this smoothie to increase the protein content. Collagen, or adding sources of plant-based protein like flax seeds, chia seeds, or hemp seeds would also be a great option for giving this smoothie a protein boost.

]]>Inspired by a Wendy’s chocolate Frosty, this smoothie taste just like one except is made dairy free with simple ingredients and less sugar than the real thing. To be clear, I’m not against having a real Wendy’s Frosty when the craving strikes, I just think a more balanced and blood sugar friendly option like this one is more of an every day thing!
Thick enough to eat with a spoon, this smoothie will bring back good memories of your childhood when the worries were small and you were just hanging out at Wendy’s with your friends! Was that just me?!
Please tell me you were one of those people who also dipped their fries into your frosty too! That is truly the original sweet and salty combination that you just can’t beat.
Oat milk, ice and frozen banana gives this smoothie that frosty like consistency and texture. Naturally sweetened with just banana, it’s not overly sweet plus has a good silky smooth chocolatey flavor!
While I see people pack in so many ingredients into their smoothies, I prefer to keep mine pretty simple and always balanced with protein, fat, and fiber so that I stay fuller for longer and don’t have a blood sugar crash after drinking one. If you want to add a handful of spinach to this chocolate smoothie, you totally can — the almond butter and banana will mask the taste so you won’t even know it’s there!

Made with just a few simple ingredients and easily customizable based on what you have at home, I know you’ll love this combination that’s delicious and nutritious!

I’m using citrus in all different fun and unique ways all week long to show you just how many different things you can do with different types of citrus! From smoothies to tacos and everything in between, citrus is super versatile, flavorful and fun to cook and bake with!
Cara cara oranges are known as The Power Orange® because they contain 100% of your daily intake of vitamin C and offer fiber, folate, potassium and vitamin A in every bite. All of these components help with satiety which means they help to keep us fuller for longer and more satisfied from the smoothie.
In this orange oat milk smoothie, the protein powder/collagen is giving you protein, the fiber is coming from the orange and flax seed and the healthy fat is also coming from the flax seed or almond butter if you choose to add that in. ]]>Silky smooth and whipped to perfection with hints of pumpkin and pumpkin spice swirled about, you absolutely have to try this pumpkin spice whipped coffee for fall!
I must say, I never got on board with the Dalgona (aka whipped) coffee trend that swept the Internet in the spring, but I was curious to see if a pumpkin version would turn out and if it would be good!
If you follow me on Instagram, then you know that I’m all about pumpkin everything and there’s basically nothing I won’t put pumpkin into! I just love how versatile and delicious it is year round and especially in the fall!
Nothing screams fall more than pumpkin coffee, am I right?! And if you’re a pumpkin spice latte lover, I know you will like this pumpkin whipped coffee version too! Starbucks has nothing on it (I do love the pumpkin cream cold brew from Starbucks though and order mine without vanilla syrup!)
Whipped coffee, also known as Dalgona coffee was the Tiktock craze that swept the nation earlier this spring. I almost think it should be called inside out coffee because you’re basically putting the coffee on top of the milk! Using a mixer, you whip instant coffee with water, sugar and in this case pumpkin to get a fluffy, whipped cream like texture that’s extra silky smooth!
