The texture of these cookies reminds me of Tate’s Cookies — you know the thin and crispy ones in the green bag you can find at grocery stores?! Those are seriously my favorite and dangerous to keep around the house! The good news is these cookies are a tad healthier and super easy to make!
To be honest, I’ve never been a huge fan of citrus fruits until this year! I don’t know what it was about them in the past, I just never really craved or cared to eat them. That all changed when I had a blood orange recently and it got me thinking how I could use them in a fun way for dessert which is how these cookies came about!
Made with simple ingredients, not a lot of sugar and delicious blood orange dark chocolate, you’ll love each and every bite of these cookies. This recipe is also a smaller batch than your standard 12 — it only makes 8 cookies, which is nice when you don’t want a huge batch of cookies lying around all week.

ingredients for blood orange & oat chocolate chip cookies
- creamy unsweetened & unsalted almond butter (I love this one from Target)
- almond flour
- coconut sugar
- egg
- oats
- vanilla extract
- zest of a blood orange
- blood orange chocolate bar ( I used this one from Lily’s)
- baking soda
- salt
utensils/tools:
- 2 small mixing bowls
- wooden spoon
- whisk
- microplane
- baking sheet
- parchment paper

Blood Orange & Oat Chocolate Chip Cookies
Ingredients
- 1/2 cup creamy unsweetened almond butter
- 1 egg
- 1 tsp. vanilla extract
- 1/4 cup almond flour
- 1/2 cup coconut sugar
- 1/4 cup oats
- 1/2 tsp. baking soda
- 1/4 tsp. sea salt
- 2 tsp. blood orange zest
- 1 bar blood orange dark chocolate I used this one, chopped into pieces
Instructions
- Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
- In a large bowl with a wooden spoon mix together almond butter, vanilla and egg until well combined. In a separate bowl whisk together almond flour, coconut sugar, oats, baking soda and salt.
- Add the dry ingredients to the wet and stir together until all mixed together. Fold in the blood orange zest.
- Use a cookie scoop to portion out the dough onto the baking sheet. Use the back of your hand to press the cookies down slightly.
- Sprinkle chopped chocolate on top of each cookie.
- Bake for 10-12 minutes. Remove from oven, and sprinkle extra flakey sea salt on top, let cool and enjoy!
