Sunny Mediterranean Breakfast Plate

Ingredients
  

  • 2 eggs
  • ½ cup chickpeas
  • ½ avocado sliced
  • ½ cup cherry tomatoes halved
  • ¼ cup feta cheese
  • 2 tsp. olive oil
  • 1 tsp. Italian seasonings
  • 1-2 tbsp. hummus optional
  •  

Instructions
 

  • Toss the chickpeas, avocado, tomatoes, feta, olive oil and Italian seasonings in a small bowl until combined.
  • Fry the eggs on a greased skillet. Add to a plate along with dollop of hummus and enjoy!
