Blueberries are hands down my favorite fruit. I have fond memories of picking them off of blueberry bushes during the summer with my family growing up and my mom and I would make the best muffins with those blueberries the next day.

I always have a container on hand for snacking, baking or to use in savory grain salads (my  favorite way to use blueberries in the winter!). Frozen blueberries are cost effective and just as nutritious and perfect for adding to smoothies or oatmeal any time of year. Having them on hand is a huge time saver for me!


Speaking of oatmeal, these blueberry lemon oatmeal cups will soon be your new breakfast obsession. Each cup is like a little individual bowl of oatmeal and my favorite way to eat them is warmed up with a little bit of peanut or almond butter on top!

Health Benefits of Blueberries

Fresh or frozen, blueberries contain beneficial vitamins and minerals, such as vitamin C, vitamin K, manganese and potassium. 

Vitamin C is an antioxidant that helps the immune system work properly. It is needed for the growth and repair of tissue all over the body and make collagen. And a serving of fresh blueberries contains 16% of the DV for vitamin C. It also helps the body absorb iron from plant-based foods. 

Also, both fresh and frozen blueberries are a good source of fiber, containing almost 4 grams of fiber per serving (a handful or a cup). Most of us are not getting enough fiber, but you can easily change that by simply incorporating blueberries into your diet more often.

Also, according to the Dietary Guidelines for Americans, vegetables and fruits, like blueberries, are associated with a reduced risk of many chronic diseases, including cardiovascular disease, and may be protective against certain types of cancers.

February is American Heart Month which is a great time to make sure you are filling your fridge, pantry, and plate with heart healthy foods. The good news is that it can be as easy as adding more blueberries to your diet!


A growing body of scientific evidence demonstrates that blueberries can be part of eating patterns to improve cardiovascular health, especially as part of an overall healthy lifestyle.

Most recently, a study that published in the American Journal of Clinical Nutrition investigated the effects of eating 1 cup of blueberries per day on heart health (in particular markers associated with stroke and heart attack) in individuals with metabolic syndrome.

Ingredients for Blueberry Lemon Oatmeal Cups

  • Oats
  • Fresh or Frozen Blueberries
  • Flax seed 
  • Cinnamon 
  • Maple syrup 
  • Lemon juice
  • Lemon zest 
  • Walnuts 
  • Unsweetened Almond Milk
  • Eggs
  • Cinnamon 
  • Baking Powder
  • Salt

How to Make Blueberry Lemon Oatmeal Cups 

Making blueberry lemon oatmeal cups is super easy! These will definitely be on repeat at your house when you see that you can put the batter together and put them in the oven in less than 30 minutes!

Start by combining the dry ingredients — the oats, flax seed, cinnamon,  baking powder and salt. Next combine the wet ingredients in a separate bowl — the eggs, almond milk, lemon juice, and maple syrup. 

Combine the wet and dry ingredients. Fold in the blueberries, add the lemon zest and let the batter sit for about 5 minutes so that the oats can soak up some of the moisture (this is what makes them spongy!). Coarsely chop the walnuts. 

Use a cookie scoop to portion out the batter into a greased muffin tin. Top each cup with a sprinkle of walnuts and bake for approximately 25 minutes  Let the cups cool in the muffin tin for a couple of muffins before using a butter knife to pop them out!

Blueberry Lemon Oatmeal Cups

Rich in vitamins and minerals, these blueberry lemon oatmeal cups make the perfect breakfast or on-the-go snack!
Prep Time 10 minutes
Cook Time 25 minutes
Servings 12 cups

Ingredients
  

  • 2 ¾ cup old-fashioned oats
  • 2 tbsp. ground flax seed
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 2 eggs
  • 1 cup unsweetened almond milk
  • 2 tbsp. lemon juice
  • cup maple syrup
  • 1 ½ cup blueberries fresh or frozen will work!
  • 2 tbsp. walnuts coarsely chopped
  • 1 tsp lemon zest

Instructions
 

  • Preheat the oven to 350 degrees F. Grease a muffin tin with cooking spray.
  • In a medium bowl whisk the oats, flax seeds, cinnamon, and baking powder.
  • In a separate bowl whisk together the eggs, almond milk, lemon juice and maple syrup. 
  • Add the wet ingredients to the dry ingredients and let stand for about 5 minutes so that the oats soak up some of the moisture.
  • Fold in blueberries and use a microplane to zest the lemon skin and add to the bowl. 
  • Use a cookie scoop to portion out the batter in the muffin tin. 
  • Bake for 25 minutes, remove from oven and let cool in the muffin tin for an additional five minutes. Use a butter knife to pop the oatmeal cups out of the muffin tin and enjoy!

Notes

Store muffins in an airtight container in the fridge for up to a week.
