Zucchini bread oatmeal is great any time of year and can even be made overnight oats style as I detail below! Zucchini is such a versatile vegetable and I love finding new ways to incorporate it into my meals. Who else loves zoodles?!
This oatmeal bowl is not super sweet — the peanut butter, banana and chocolate chips on top definitely help!
To add even more nutrition and texture to this oatmeal you can add 2 tbsp. of pumpkin puree while the oats are cooking. Are you surprised that I said that?! LOL! You know I’m all about the pumpkin, so I often make it this way!

Zucchini Nutrition
Zucchini, also known as summer squash is a super nutritious vegetable! It’s packed with antioxidants, vitamin A. C potassium, and magnesium. Vitamin A is beneficial for the immune system and very important for vision.
Zucchini’s high water content along with the fiber it contains helps to fill you up and is great for digestion– all the more reason to incorporate it in your meals in fun ways!
Ingredients in Zucchini Bread Oatmeal
- old-fashioned oats {gluten free if desired}
- zucchini
- unsweetened almond milk
- cinnamon or pumpkin pie spice
- salt
- banana or berries
- nut butter
- hemp seeds
- chocolate chips (optional, but highly recommended for a little sweetness — I love this brand!)
- grater
Zucchini Bread Overnight Oats
Prefer overnight oats? Make this recipe into overnight oats by adding the oats, almond milk and zucchini to a bowl and mixing together and storing in the fridge overnight. In the morning once the oats have absorbed the liquid top with nut butter, and banana and enjoy cold! If that’s your jam, I know you will also like my pumpkin spice overnight oats!

Zucchini Bread Oatmeal
Ingredients
- 1/2 cup old-fashioned oats
- 1 cup unsweetened almond milk
- 2 tsp. cinnamon or pumpkin spice
- pinch of salt
- 1/3 cup grated zucchini
- 1 banana or 1/2 cup berries
- 2 tbsp. unsweetened almond or peanut butter
- 1 tbsp. hemp seeds
- chocolate chips optional
Instructions
- Using a grater, grate a washed zucchini into a 1/3 cup.
- In a small saucepan, combine oats with almond milk and salt. Cook over medium heat and stir while the oats begin to thicken.
- Add the cinnamon and the grated zucchini when the oats have thicken and absorbed nearly all of the liquid.
- Transfer to a bowl and top with banana slices, berries, melty nut butter, hemp seeds and extra cinnamon! Sprinkle a couple of chocolate chips on top too if you want!
