If you follow me on Instagram, then you know I love everything about the fall and cooking and baking with pumpkin in sweet and savory ways! These glazed pumpkin cookies truly embody the spirit of the fall season and are definitely one of my favorite pumpkin cookie recipes ever.

The icing on top gives each bite a little extra sweetness, which complements the soft, and hearty texture, plus it makes them look extra fancy! Making these iced pumpkin cookies is easy and I know you’ll love them for many falls to come!

These cookies are made with simple ingredients, making them a healthier pumpkin oatmeal cookie than most you would find at the store. Perfect to make on a crisp Saturday afternoon in the fall when you’re in the mood for baking!

  • pumpkin puree
  • whole-wheat pastry flour or white whole-wheat flour or 1:1 gluten-free flourMaybe you’re wondering, what is whole-wheat pastry flour? I got you! Whole-wheat pastry flour has a lower protein content than regular whole wheat flour and makes nice whole grain baked goods like pie crust, muffins, quick breads, pastries and cookies, and still retains the nutrients of whole-wheat flour. If you’re looking for a gluten free option, 1:1 gluten-free flour can be substituted.

  • coconut oil

  • brown sugar or coconut sugar

how to make pumpkin cookies

  1. Mix. Using a hand or a stand mixer, beat together the sugar, coconut oil, egg, vanilla extract and pumpkin puree until combined. Preheat the oven to 375 degrees F.
  2. Whisk. In a separate bowl whisk together the flour, pumpkin spice, cinnamon, baking soda and salt.
  3. Combine. Add the dry ingredients to the wet and mix on low until just combined.
  4. Fold. Fold in the oats until just combined.
  5. Bake. Portion out the cookie dough onto a prepared baking sheet and bake for 10-12 minutes.
  6. Prepare the glaze. While the cookies are baking whisk the ingredients for the glaze together.
  7. Let cool. Take the cookies out of the oven and let cool completely.
  8. Drizzle and enjoy! Drizzle with maple icing and enjoy!

Making the icing for these glazed pumpkin cookies is super easy! You will simply whisk the confectioners sugar, maple syrup and pumpkin pie spice together in a small bowl until it thickens to a creamy consistency. A fork will also work for mixing everything together.

Ingredients
  

  • 1 cup whole-wheat pastry flour or white whole-wheat flour
  • 2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • ¾ tsp. baking soda
  • ¼ tsp. salt
  • 1/3 cup coconut oil melted
  • 1/2 cup packed brown sugar or coconut sugar
  • 1 tsp. vanilla extract
  • 1 egg
  • ¾ cup pumpkin puree
  • 1 cup old-fashioned oats or GF old-fashioned oats
  • for the maple icing:
  • 1/2 cup confectioners sugar
  • 1 tbsp. maple syrup
  • 1/2 tsp. pumpkin pie spice
  • 1 tbsp. milk oat or almond work if needed

Instructions
 

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
  • In the bowl of an electric mixer beat coconut oil, brown sugar, vanilla, and egg until well combined and creamy. Add in pumpkin and beat on low speed until just combined.
  • In a separate bowl, whisk together the flour, pumpkin spice, cinnamon, baking soda and salt. 
  • Add the dry ingredients to the wet, mixing on low until just combined. Fold in the oats with a wooden spoon.
  • Portion out cookie dough using a cookie scoop onto prepared. baking sheet. 
  • Bake for 10-12 minutes. 
  • While the cookies are baking whisk or use a fork to whisk together the ingredients for the icing. If it’s too thick to drizzle add a little oat or almond milk (>1 tbsp.). 
  • Remove cookies from oven, let cool completely and use a fork to drizzle the icing on top. Enjoy! 

Notes

I recommend storing these pumpkin cookies on the counter for a day and then in an airtight container for maximum freshness!

  1. Really yummy! I ended up with 14 cookies but the smaller cookies did not impact the cooking time. These don’t spread much while baking, perfect since I packed them in pretty closely on the baking sheet.
