One of my favorite things to do in the fall is to go apple picking — the taste of a perfectly ripe, crispy apple, the smell of an apple orchard, and the chill in the air, I love it all! Apple slices with nut butter and pumpkin pie spice are the perfect fall snack and this baked oatmeal recipe is a perfect way to use up fresh apples too!

To me, fall and oatmeal are basically synonymous. Warm baked oatmeal makes for a delicious breakfast on a chilly morning and fall flavors and spices like apples, pumpkin, cinnamon, and ginger complement oats so well! What I love about this pumpkin apple baked oatmeal recipe is that you can make it ahead of time for breakfast all week — and don’t forget the nut butter drizzle on top!

I used honeycrisp apples in this recipe, but feel free to use whichever you like best or have on hand from apple picking. I don’t think you can go wrong! I like the little pieces of apple baked into the oatmeal because they balance out the chewy oats with a little bit of tart sweetness.

Why Pumpkin Baked Oatmeal is a Great Breakfast

This oatmeal recipe is a a great breakfast because it starts your day with a lot of important nutrition that some of us don’t get enough of. Fiber, I’m looking at you!

Both oats, pumpkin and apples are a great source of fiber. Oats contain a soluble fiber called beta-glucan which helps to lower cholesterol. They also give this baked oatmeal more protein per bite.

Pumpkin, pumpkin seeds and apples also contribute to the fiber content of this recipe, that will help fuel your morning and keep you fuller for longer. I love topping a slice with creamy, unsweetened almond butter or peanut butter, which gives it some healthy fat that helps with satiety too!

This pumpkin apple baked oatmeal is great one to prep ahead of time for the week. The fall brings back schedules and routines that we may have neglected during the summer and having this ready to go for breakfast during the week is one less thing you have to think about. Instead, it’s something you can feel good about eating!

Pumpkin Apple Baked Oatmeal

This pumpkin apple baked oatmeal is a warm and cozy breakfast that is perfect all fall long! Make it ahead of time and enjoy slices all week with nut butter on top!

Equipment

  • 1 mixing bowl
  • 1 Whisk
  • 1 cutting board
  • 1 9X5 baking dish

Ingredients
  

  • 1 ½ cups old-fashioned oats
  • 1 tbsp. ground flax seed
  • 1 tsp baking powder
  • ½ tsp sea salt
  • 2 tsp. pumpkin pie spice
  • 1 tsp. ground cinnamon
  • 1 tsp. ground or fresh ginger
  • ¾ cup unsweetened almond milk
  • 1/2 cup pumpkin puree
  • 1 egg
  • ¼ cup maple syrup
  • 1 tsp. vanilla extract
  • 1 medium apple pealed and diced + 1/2 apple thinly sliced on top
  • 2 tbsp. pumpkin seeds

Instructions
 

  • Preheat oven to 350 degrees F. Grease a 9×5” baking pan, set aside.
  • In a small bowl, whisk together the oats, flax seed, pumpkin pie spice, cinnamon, ginger, baking powder, and salt. Set aside.
  • In a large bowl, whisk the egg, almond milk, pumpkin puree, and vanilla until combined. 
  • Add dry ingredients to the wet ingredients and stir until completely combined. Let sit for about 3-4 for the oats to absorb some of the liquid. Fold in the diced apples 
  • Pour batter into prepared baking dish. Slice the remaining apple into very thin slices and arrange like a fan on top of the oatmeal, sprinkle with pumpkin seeds.
  • Bake for 30 minutes or until the top is set and slightly browned. Remove from oven and let cool.
  • Drizzle with almond butter and top with extra low sugar granola, or nuts and enjoy!

Notes

Store baked oatmeal in the fridge in a covered container for 3-4 days.
