Kicking off February with sprinkles! Lots and lots of sprinkles in these birthday cake protein balls! Packed with all the good flavor of birthday cake/cake batter rolled into one bite-sized ball with sprinkles on top.

Made with almond flour and cashew butter and vanilla extract which really mimic the taste of birthday cake, they’re gluten and dairy free and sweetened naturally with honey. I like using honey where ever I can in baked goods and to sweeten my tea because it’s 100% pure and unprocessed.

This protein ball recipe comes together in less than 20 minutes and taste the best cold, right out of the fridge. They’d be perfect to make for your roommate or significant other who wants to celebrate their birthday with a healthier treat that tastes like the real thing.

I’m definitely not against having a piece of real birthday cake, but these make for a nice stand in whether someone has dietary restrictions or just prefers something with less sugar.

Making birthday cake balls

Making these healthy cake balls is super easy! I recommend pulsing all of the ingredients together using a food processor, however I have also made them by mixing all of the ingredients together in a bowl using a wooden spoon. The only difference is that the texture wasn’t as smooth — no difference in taste!

I used regular store-bought sprinkles for this birthday cake ball recipe, however there are ones out there that do not have artificial colors. It’s totally up to you on what you prefer to use!

Birthday Cake Protein Balls

Ingredients
  

  • 1 cup blanched almond flour
  • 1/4 cup cashew butter
  • 1/4 cup honey
  • 2 tsp. vanilla extract
  • 1 serving vanilla protein powder or unflavored collagen
  • 1/4 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 tbsp sprinkles + more for rolling the balls in

Instructions
 

  • Place all of the ingredients in the bowl of a food processor except for the sprinkles. 
  • Pulse until a dough forms. Add the sprinkles and pulse once more until combined. 
  • Use a cookie scoop to portion out the dough into balls. Roll them so that they’re smooth and round with your hands and then roll them in extra sprinkles to coat the outside. 
  • Store in a container in the fridge — enjoy!
