Can I tell you a secret? I never thought I liked chia pudding and have avoided it even when it started getting really popular and popping up on blogs everywhere! I realized I like my a little thicker, which is why I made it with yogurt vs. coconut milk.

Nutrition Benefits of Pumpkin Spice Chia Seed Pudding

It’s no secret that pumpkin is the star of the show come late August and aside from the fall flavor it gives everything you add it to, it has a ton of nutritional benefits too!

Adding pumpkin puree to this chia gives it more vitamin A (all orange veggies contain beta-carotene that is turned into vitamin A in our bodies) K, E, and C plus fiber and potassium.

This recipe makes for a great breakfast or snack because it’s packed with protein and fiber from the chia seeds, pumpkin puree, apples and pumpkin seeds. It’s super important that your breakfast and snacks contain protein and fiber because these two components help you to stay fuller for longer and fiber is crucial for digestion.

Ingredients for Pumpkin Spice Chia Pudding:

  • chia seeds
  • almond milk
  • pumpkin puree
  • plain, vanilla or pumpkin yogurt — I like siggi’s yogurt for all of my recipe and snacking needs because it’s lower in sugar and higher in protein!
  • apple
  • pumpkin pie spice
  • vanilla extract
  • pumpkin seeds
  • coconut oil

Pumpkin Spice Chia Seed Pudding

Have it for breakfast or dessert, either way you can’t go wrong with this pumpkin twist on chia seed pudding! The apples and pumpkin seeds on top are the perfect topping full of fall flavor! 
Prep Time 10 minutes
Servings 2 -3 servings

Ingredients
  

  • 1/4 cup chia seeds
  • 1/2 cup plain vanilla or pumpkin yogurt
  • 1/2 cup almond milk
  • 2 tbsp. maple syrup
  • 1/4 cup pumpkin puree
  • 1 1/2 tsp. pumpkin pie spice
  • 1/2 tsp vanilla extract
  • apple topping:
  • 1/4 cup diced apples I used honeycrisps!
  • 1 tbsp coconut oil
  • 1-2 tsp. pumpkin pie spice

Instructions
 

  • Mix all the chia pudding ingredients together in a bowl until everything is well combined.
  • Cover and place in the fridge to firm up for at least 2 hours or overnight.
  • Meanwhile, sauté the diced apples in the coconut oil and pumpkin pie spice.
  •  Top chia pudding with apples and an extra sprinkle of pumpkin pie spice when you’re ready to eat!
