Pumpkin Spice Chia Seed Pudding

Have it for breakfast or dessert, either way you can't go wrong with this pumpkin twist on chia seed pudding! The apples and pumpkin seeds on top are the perfect topping full of fall flavor! 
Prep Time 10 minutes
Servings 2 -3 servings

Ingredients
  

  • 1/4 cup chia seeds
  • 1/2 cup plain vanilla or pumpkin yogurt
  • 1/2 cup almond milk
  • 2 tbsp. maple syrup
  • 1/4 cup pumpkin puree
  • 1 1/2 tsp. pumpkin pie spice
  • 1/2 tsp vanilla extract
  • apple topping:
  • 1/4 cup diced apples I used honeycrisps!
  • 1 tbsp coconut oil
  • 1-2 tsp. pumpkin pie spice

Instructions
 

  • Mix all the chia pudding ingredients together in a bowl until everything is well combined.
  • Cover and place in the fridge to firm up for at least 2 hours or overnight.
  • Meanwhile, sauté the diced apples in the coconut oil and pumpkin pie spice.
  •  Top chia pudding with apples and an extra sprinkle of pumpkin pie spice when you're ready to eat!
