You definitely can’t have French toast without eggs and if you’re following along on Instagram, then you know that this week was egg week! I shared new and fun ways to use eggs for breakfast, lunch, dinner and snacks and more on why they are a nutritious choice! 

I love the flavor combination of pumpkin, apples and cinnamon and when this French toast is baking in your oven, your whole house will smell delicious and remind you of why you love fall. 

This recipe will work with whatever bread you have on hand to make French toast with. The brioche bread is extra fluffy and happens to be cinnamon swirl, which adds to the delicious flavor of this French toast!

Brioche french toast is french toast made with super fluffy brioche bread. When you have french toast made from brioche bread there is no going back to using another other bread for french toast. I buy the loaf I used in this recipe at Whole Foods in the bakery section. They have a plain one, a cinnamon swirl and a chocolate version. I recommend the cinnamon swirl version for this recipe!

You’ll want to make this pumpkin French toast in advance of when you want to eat it! I recommend making it the night before, so that the bread can really soak up the egg mixture and then baking it in the morning.

Once you make the egg mixture with the almond milk, pumpkin puree, and pumpkin pie spice, you will simply pour that over the bread chunks for everything to “marinate”. 

This recipe bakes in the oven for about 45 minutes, so make ahead, then bake it in the oven and sit back and relax while your brunch bakes and your home fills with the comfy scent of fall!

Pumpkin Brioche French Toast

Pumpkin brioche french toast makes for the most delicious brunch in the fall or anytime you’re in the mood for something pumpkin. With warm cinnamon apples on top, and pumpkin spice in every bite, I know you’ll love it!
Prep Time 8 hours 8 minutes
Servings 6 servings

Ingredients
  

  • 1 loaf of brioche bread sliced into chunks**
  • 5 eggs
  • ¼ cup pumpkin puree
  • 3/4 cup unsweetened almond milk
  • 2 tsp. cinnamon or pumpkin pie spice
  • 2 tbsp. maple syrup
  • 1 apple diced
  • 1 tsp. cinnamon

Instructions
 

  • Grease a 9X7 baking dish with cooking spray. Add brioche bread chunks so that they all fit together (doesn’t have to be perfect looking).
  • In a medium bowl, whisk eggs, pumpkin puree, almond milk, and pumpkin pie spice or cinnamon. Pour mixture over the bread so that all of the pieces are covered.
  • Cover the baking dish and refrigerate for at least 2 hours or overnight.
  • When ready to eat, preheat the oven to 350 degrees F.
  • Toss the diced apple with the cinnamon.
  • Remove the French toast from the fridge and sprinkle the diced apples on top so that the entire top is covered with apple pieces all over the top of the french toast.
  • Bake for 45 minutes to an hour until done, let cool and sprinkle with extra fresh apples and a drizzle of maple syrup. Cut into pieces and enjoy!
