Pumpkin pie is such a quintessential Thanksgiving dessert, and I’m giving my version a unique spin by infusing it with the flavors of a pumpkin spice latte!
Just a hint of coffee, mascarpone cheese, and whipped cream plus pumpkin pie spice on top give this pumpkin pie a richness that is reminiscent of the famous coffee house drink! Which by the way if you haven’t made my homemade pumpkin spice oat milk latte yet, now is the time!
Making a pumpkin pie is one of those things that I feel like a lot of us think is super intimidating, but after making this one (granted I didn’t make the pie crust) it can be way easier than you and I might have thought! You don’t need a fancy mixer, just a wooden spoon, the ingredients and a little bit of love to bake up a dessert everyone will love!

Ingredients for Pumpkin Spice Latte Pie
- store bough pie crust (or whichever homemade recipe you prefer)
- pumpkin puree (not pumpkin pie mix)
- mascarpone cheese
- brown sugar
- cane sugar
- eggs
- brewed espresso
- pumpkin pie spice
- whipped cream (optional)
- caramel sauce (optional)


Pumpkin Spice Latte Pie
Ingredients
- 1 pie crust
- 1 15 oz. can
- 1/2 cup packed brown sugar
- 1/2 cup mascarpone cheese
- 1/4 granulated sugar
- 2 tsp. pumpkin pie spice
- 4 eggs lightly beaten
- 6 tbsp. brewed espresso
- whipped cream optional
- caramel sauce optional
Instructions
- Bring store bought pie crust to room temperature and unroll into a pie dish.
- In a large bowl combine pumpkin, sugars, mascarpone cheese, and pumpkin pie spice.
- Stir in eggs and espresso until combined.
- Pour pumpkin mixture into piecrust.
- Cover the pie crust edges with foil to prevent from burning.
- Bake 45- 50 minutes until the center is set. Let cool and chill within 2 hours
- Top slices with whipped cream, caramel sauce, and extra pumpkin pie spice!
