I absolutely love going to apple orchards and pumpkin patches in the fall and picking out pumpkins and getting a bushel of fresh apples. Many apple slices plus nut butter and bowls of oatmeal with diced apple pieces on top later, I still always find myself with more apple than I know what to do with. You too? Enter these apple shortbread bars!

I have yet to make an entire apple pie from scratch, but when I want a healthy treat that tastes just like one, I always turn to these bars! The inspiration for them comes from this recipe for blueberry shortbread bars.

Whether you make them with blueberries, or apples, one thing’s for sure. You’ll love them!

  • almond flour
  • coconut flour
  • coconut oil
  • maple syrup
  • pumpkin pie spice
  • apple
  • vanilla
  • salt

how to make this apple recipe

This recipe is super easy to make! You will simply mix all of the shortbread crust ingredients together in a bowl until a batter forms. Then, while the crust bakes you will prepare the apples by sautéing them in coconut oil and pumpkin spice.

Then, you top the crust with the apples and the extra crumb topping and bake for an additional ten minutes, let cool and enjoy! It’s just that simple!

Apple Pie Shortbread bars

Apple pie shortbread bars are a fun treat to bake up with your fresh apples! They’re easy to make and are ready in less than 20 minutes. 
Prep Time 5 minutes
Servings 9 bars

Ingredients
  

  • shortbread crust:
  • 2 cups almond flour
  • 2 tbsp. coconut flour
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 1/3 cup maple syrup
  • 1/3 cup coconut oil melted
  • apple filling:
  • 1 apple I used a honey crisp
  • 2 tsp. pumpkin pie spice
  • 2 tsp. coconut oil

Instructions
 

  • Preheat oven to 350 degrees F. 
  • Mix together the almond flour, coconut flour, coconut oil, maple syrup, vanilla, and salt in a large bowl.
  • Reserve 1/4 cup of the batter. Put the rest of the crumble into a square baking pan lined with parchment paper and press it into the corners to make an even layer.
  • Bake for about 12 minutes until the edges begin to get golden brown.
  • In the meantime, prepare the apples. Wash and slice the apple into thin slices. Sautee on a pan with pumpkin spice and coconut oil until slightly tender. 
  • Remove the crust from the oven. Assemble the apples on top and top with remaining crumble. 
  • Crumble the remaining crumble on top of the apples.
  • Bake for 10 more minutes, remove let cool and cut into 9 slices.
